We’re bringing new life to a beloved British classic — the Simnel Cake — with the gentle warmth and radiance of our premium saffron.

Simnel Cake is a centuries-old fruitcake traditionally enjoyed typically on Mothering Sunday or Easter Day during Lent, known for its layers of fruit, marzipan, and symbolism. In our version, saffron replaces the usual simplicity with something richer, more aromatic, and visually striking.

What Makes It Special

  • Infused with saffron steeped in warm milk
  • A light, spiced fruitcake with layers of golden marzipan
  • Topped with 11 marzipan balls representing the faithful apostles
  • Beautifully balanced — not too sweet, not too dense

Saffron Simnel Cake Recipe

Ingredients:

  • 1 cup mixed dried fruit (raisins, sultanas, currants)
  • ½ cup candied citrus peel
  • ¾ cup butter (softened)
  • ¾ cup brown sugar
  • 3 eggs
  • 1 cup all-purpose flour
  • ½ cup almond flour
  • 1 tsp baking powder
  • ½ tsp cinnamon, pinch of nutmeg
  • Zest of 1 orange
  • 2 tbsp milk + 15–20 saffron threads, steeped
  • 250g marzipan
  • 2 tbsp apricot jam (for glaze)

Instructions:

  1. Soak dried fruits in orange juice overnight.
  2. Steep saffron in warm milk for 15 minutes.
  3. Cream butter and sugar. Beat in eggs, saffron milk, and zest.
  4. Fold in flours, baking powder, spices, and dried fruits.
  5. Spoon half the batter into a greased 8-inch cake tin.
  6. Roll out ⅓ of marzipan into a disc and place over the batter.
  7. Add remaining batter and bake at 150°C (300°F) for 90 mins.
  8. Cool. Top with a marzipan disc and 11 small marzipan balls.
  9. Brush with apricot jam and lightly grill or torch for a golden finish.

Serve with:

A floral black tea or a glass of dessert wine — or simply on its own, as the centerpiece of your spring table.
