Recipe: Saffron Carrots with a Persian Twist

Ingredients:

  • 1 lb carrots, peeled and sliced on a bias
  • 5–7 threads Zarafron saffron (coming soon), bloomed as above
  • 2 tbsp olive oil or ghee
  • 1 tbsp honey or maple syrup
  • Pinch of sea salt
  • 1/2 tsp ground cumin (optional)
  • Chopped pistachios and fresh herbs (like parsley or dill) for garnish

Instructions:

  1. Heat olive oil or ghee in a large skillet over medium heat. Add carrots and sauté until slightly tender, about 5 minutes.
  2. Drizzle in honey, sprinkle salt, and add cumin if using. Toss to coat.
  3. Pour in the saffron infusion and stir gently. Cover and cook another 5–7 minutes, until carrots are glazed and golden.
  4. Finish with a sprinkle of pistachios and fresh herbs.
